Protein Berry Oatmeal Cups | Hinsdale Area Moms

Anybody else serving food like a 24 hour diner?? I have been on the hunt for healthy recipes that taste great and fill them up!!! This recipe is courtesy of Victoria Helle, Certified Health Coach and Behavior Change Specialist and teacher at Plate28 in Hinsdale.

I’ve come to absolutely LOVE these Freezer-Friendly Protein Berry Oatmeal Cups. You can make many batches ahead, freeze them for up to 3 months, and pull them out for those days that just come at you faster than you expected.

These Protein Berry Oatmeal Cups make an amazing breakfast, snack or dessert. Enjoy!

Protein Berry Oatmeal Cups

Makes 12 servings
Ingredients:
1 Banana (mashed)
2 Eggs
1/4 cup Maple Syrup
1/2 cup Unsweetened Almond Milk
1/2 cup Oat Flour
2 cups Oats (rolled)
1/4 cup Vanilla Protein Powder (I used a plant based protein powder by Orgain)
1 tsp Baking Powder
1 tsp Cinnamon
1/4 tsp Sea Salt
1 tbsp Coconut Oil (melted)
1 1/2 cups Frozen Berries (thawed)

Directions:
Preheat the oven to 350F (177ºC). Line a muffin tin with liners.
Add mashed banana, eggs, maple syrup and almond milk to a medium-sized bowl. Mix well.
In a large bowl, whisk the oat flour, rolled oats, protein powder, baking powder, cinnamon and sea salt. Combine the wet ingredients into the dry then add the melted coconut oil. Mix again until combined.
Fold the thawed berries into the mixture. Once combined, scoop into the muffin tin and bake for 18 to 20 minutes. Remove, let cool and enjoy!
A few notes for storage and modification:
Leftovers: Refrigerate in an airtight container for up to four days. Freeze in a storage bag for up to three months.
If you want to make this nut-free: Use boxed coconut milk instead of almond milk.
Variation: I’ve also tried this recipe with using diced apples instead of frozen berries. Super delish!
